Beet ice cream: it’s what’s for breakfast

Want your kids to eat more vegetables? Puree them and load them with sugar and cream and put them in ice cream.  Okay, so it is not the greatest plan ever, but Monkey Man and Gorilla Girl liked the beet ice cream.

I loved it. EE says our neighbors will really like it, too, but I am considering not sharing this batch! After churning it late last night and tasting this morning once frozen, the beet ice cream not only has a wonderful color, it has a sweet and intense flavor.  The little bits of beet are welcome, too.  Usually, I like the ice cream to be smooth, and I was a little worried that I did not do a thorough enough job of straining the pulp from the puree, but the tiny beet pieces add a kick to the ice cream. Perhaps this fills one vegetable requirement.

    Beets anything! I put them in hummus and it was delicious.
